I want to use google gtalk on my cingular 8125 windows mobile 5 pocket pc. how do I do it?

I'm thinking that you will most likely have to search and see if google has released gtalk for cell phones. Then all you need to do is download it to your computer (setup will be mostly likely a cab file), use Activesync to transfer the file to your phone and sign up for internet and data plans from Cingular.
